Sometimes I am not that brave when it comes to cooking.

When we first got married, I was a horrible cook. No, no, not just me saying I was horrible, but my husband (as sweet as he is) always found the nicest words to tell me to use a recipe, this was awful. Awful usually wasn’t in the sentence, but mostly it was (ok, sometimes between the lines…)

I actually started opening a cookbook about 2 years into being married. And well, now we have Pinterest! And the rest of the internet of course. But at least I have a place to put all the recipes that worked in one place. I do tend to over pin things sometimes, but that’s ok. Thankfully for me, there is a delete button.

Here’s the first recipe: Taco Pizza on Pita Bread

Ingredients:

Pita Bread (I actually think it had another name…I believe it is what you can use for Panini Sandwiches)

Sour Cream

Tomatos

Green and/or Red peppers

Ground Beef (fried up with onions, bit of garlic, 3 teaspoons of cumin, 3 teaspoons of chill powder, salt & pepper to taste)

Lots of Cheese-whatever your family likes. We like Cheddar.

Directions:

1. Place the bread on baking sheets. Start the layers off with sour cream to cover.

 

 

 

 

 

 

 

 

 

 

 

2. Add your vegetables and then the beef (you don’t want the juice from the taco meat to soak the bread before it cooks. The veggies seem to stop that from happening. Top with cheese.

 

 

 

 

 

 

 

 

3. I added more Cheese to most of the pizzas I made and broiled them after this photo was taken.  I made 4, and we had two left over. The Mr. ate one to himself. The girls and I shared. And had lunch the next day!

 

 

 

 

 

 

 

 

The second recipe: Potato Soup (Originated from the Betty Crocker iPhone App)

We didn’t get too many potatoes this year in the garden. But we got enough to say that we will have some for the next few months. So that they don’t go bad on me (I’ve never had to keep potatoes all winter before), I am cooking up lots of freezer meals. I think they will be handy in the winter, especially after Baby comes in December.

Ingredients:

3 cups of water

5-8 large potatoes (peeled and cut into 1/2″ cubes)

2 cups milk

2 teaspoons of butter (or margarine)

1/2 teaspoon salt

1/4 teaspoon pepper

16 medium green onions finely chopped (1 cup)

1-2 cups of shredded Cheddar Cheese (it called for 1, I called for 2:)

Directions:

1. Boil water

2. Add potatoes. Return to boil. Cover. Reduce heat & simmer 5-7 minutes.

3. Drain potatoes. Reserve 1 cup of potatoes, but add the rest to a blender.

4. Add 1 cup of milk to blender & blend potatoes until smooth. Add more milk to reach desired consistency.

5. Return everything to the pot you boiled the potatoes in. Add the reserved 1 cup of potatoes, 1 cup of milk, 2 teaspoons of butter, salt, pepper, 3/4 c. green onions & 1 3/4 c. of the cheese.

6. Combine & cook for 5-10 minutes, stirring frequently until soup is hot & cheese is melted.

7. Garnish with green onions & cheese.

 

 

 

 

 

 

 

 

 

 

I had enough for supper & enough for 2 meals in the freezer! That is very exciting to a pregnant mommy….or a busy mommy for that matter!

And neither meals had the word “awful” verbalized or between the lines in the after meal commentary my husband gave me.
